Lentil as Anything! (Karen’s easy red lentil soup)

Lentils are yummy, good for you and CHEAP. I can’t do any better than that people.

Eat this.

Karen’s Easy Lentil Soup

1 onion (chopped)

1 medium carrot (chopped)

1 celery stick (chopped). Let the rest of the bunch go off in your crisper and throw it out in three weeks’ time.

Fry those three things with a little oil, when it’s soft, add 1 teaspoon of ground cumin and 1 teaspoon of ground coriander. Now’s the time to add a little bit of chilli if you want.

Add 1 cup red lentils.

Add 3 cups of vegetable stock. You can get the kind Manu peddles if you want but a few cubes in hot water will do the trick and leave you with $5 for a coffee tomorrow.

Add half a bottle of Passata or a tin of tomatoes if that’s what you have in your pantry.

Cook on a low heat for about 20 minutes or until the lentils are soft.

Karen notes ‘This does make rather a lot but it’s jolly nice to pop in the fridge and then simply re-heat over the course of the week.’ Sit back and think about how well you’re doing in life.
